Light and Fluffy Vegan Pancakes

Start your weekend right with these super easy, light and fluffy vegan pancakes:

What you will need:
• 1 cup flour (of your choice)
• 1 cup plant milk (of your choice)
• 2 tbsp maple syrup (I used sugar free)
• 1 tbsp vegetable oil
• 1 tsp apple cider vinegar
• 1 tsp baking powder
• 1 tsp cinnamon
• Pinch of salt

To Top (all optional):
• Blueberries
• Chopped banana
• Maple syrup/ yoghurt

The method:
• Mix your plant milk and your apple cider vinegar in a bowl and then leave to stand for 5 minutes
• Add in all other ingredients and give it a good mix. Then leave this to stand for 10 minutes
• Heat some vegan butter in a pan until melted
• Pour desirable amount of batter into pan and flip each pancake when bubbles have become visible on the top
• Plate up and enjoy!
