Super Simple Butternut Squash Soup

As we are heading into Autumn here in Western Australia, it means soup season is finally upon us! If you are looking for a way to spice up your life (and your soup) try this super simple, yet delicious recipe.

You will need:
• 1 butternut squash
• 2 tbsp of curry powder (or more if desired)
• 1 can of coconut milk
• 2 cups of vegetable stock
• 2 tbsp olive oil
• 1 tbsp of garlic paste

The Method:
• Start by cutting your butternut squash into small chunks
• Then on a low heat, add the olive oil, curry powder and garlic paste to a pot and stir for one minute
• Next, add in your chopped squash, coconut milk, veggie stock and stir
• Cover and leave on a low heat for 30 minutes
• When squash has softened, take off the heat, wait for it to cool and blend

Reheat before serving, season with salt and pepper and enjoy! (I would also recommend adding some croutons and a drizzle of coconut milk for presentation)

Cooking time: 30 minutes

Serves: 6
